Grilled Mushrooms

These Grilled Mushrooms make a tasty appetizer or side dish. Homemade marinade featuring sherry and garlic give the mushrooms a bold, zesty flavor. Prepare ahead for tailgate parties and barbecues.
Servings: 6

  • 1/3 cup of dry cooking sherry
  • 3 Tbsp of olive oil
  • 1 Tbsp of sherry vinegar
  • 2 cloves of garlic minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 lbs fresh mushrooms trimmed

  • Whisk sherry, oil and vinegar in a large mixing bowl until blended.
  • Mix in garlic, thyme, salt and pepper.
  • Add mushrooms and stir until well coated.
  • Cover and marinate for at least an hour until most of the liquid is absorbed.
  • Lightly oil the grill grate and heat to medium-high.
  • Thread mushrooms onto 4 skewers.
  • Grill for 10 minutes, turning frequently to brown on all sides.

Tip: If using wooden skewers, make sure to soak them in water for 30 minutes so they don’t burn.
