Preheat the Oven to 425*F.
Cut cauliflower into quarters; grate it into fine pieces with a cheese grater.
If you didn’t buy the already shredded cheeses, go ahead and shred them with a grater.
Cook the bacon over medium-high heat. Once you get it to your likeness be sure to cut into small small pieces.
In a large mixing bowl combine cauliflower and cheeses.
Add the butter, egg, bacon, and onion powder. Season with some pepper and pink Himalayan salt to taste.
Carefully stir all ingredients together until completely they are all completely blended. Then place the the mixing bowl in the refrigerator for approximately 10 minutes.
Use parchment paper to cover a large baking sheet. Scoop the mixture out and form the tots by hand. Equally space them out on the baking sheet. There should be enough for 15 tots/3 servings of 5. Feel free to make them smaller if you want, and adjust the cooking time accordingly if needed.
Bake in the Oven at 425*F for about 22 Minutes, or until Golden Brown.
