Roast Salmon

Roast Salmon makes an elegant holiday dinner. This recipe is simple, yet flavorful, and very easy to follow, using common items already in your pantry.
Servings: 4


  • 1 2.5 lb. pink salmon fillet
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cloves of garlic minced
  • 3 Tbsp fresh parsley chopped


  • Preheat the oven to 425F degrees.
  • Line a baking sheet with foil.
  • Rinse the salmon and pat dry. Do not remove the skin.
  • In a small bowl, combine oil, salt, pepper, garlic and parsley.
  • Stir until well blended, and then rub the mixture over the salmon.
  • Bake for 15 minutes. The center of the filet should be slightly translucent.
  • Remove salmon from oven and allow it to rest for 5 minutes before serving. This step is critical: residual heat finishes cooking the filet without drying it out.
