This homemade veggie Burger Recipe features healthy wheat berries and grilled eggplant. Served in pita pockets, they make a great vegan alternative to the traditional barbecue menu.
Ingredients
1 eggplant, peeled and sliced 3/8 inch thick
2 tomatoes, sliced 1/3 inch thick
1 onion, quartered
1 baking potato, peeled and sliced 1/4 inch thick
1/3 cup extra virgin olive oil
4 slices of toasted bread
4 cloves of garlic
1/2 cup of wheat berries, cooked
1 Tbsp of fresh dill
1/2 tsp salt
1/4 tsp pepper
6 pita pockets
6 lettuce leaves
Instructions
Brush eggplant, tomatoes, onion and potatoes with olive oil.
Grill vegetables for 12 minutes over medium heat, turning occasionally until tender.
Process toasted bread into fine crumbs in a food processor. Set aside.
Process garlic until finely chopped.
Add the grilled vegetables to the processor with the garlic. Process until smooth.
Stir the mixture into the bowl with the bread crumbs.
Blend in wheat berries, dill, salt and pepper.
Form into 6 patties and mist with non-stick cooking spray.
Grill over medium heat for 5 minutes on each side or until as crisp as desired.
Place burgers into pita pockets and top with lettuce before serving.
