1 lb turkey breast cut in cubes
1 (28 oz) can diced tomatoes
1 (15 oz) can black beans, rinsed and drained
1 (8 oz) can tomato sauce
1 cup pumpkin, peeled, seeded and cubed
1 onion, chopped
1 clove of garlic, minced
1/2 cup frozen corn
1/2 cup chicken broth
1 Tbsp chili powder
1 (4 oz) pkg. Monterey Jack cheese, shredded
Combine the turkey, canned tomatoes with juice, black beans and tomato sauce in the crock pot. Stir well.
Add the pumpkin, onion, garlic and corn.
Stir in the chicken broth and chili powder.
Cover and cook on low for 10 hours.
Sprinkle cheese on top just before serving.
Try adding 1/2 cup of cranberries for color and variety.
