This Steak Salad Recipe features strips of seasoned steak over a bed of fresh greens and a special mint and yogurt dressing. Makes an elegant main dish for any gathering.
1 lb. round steak
1 Tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1 (5 oz.) pkg. mixed salad greens with herbs
2/3 cup radishes, sliced
1 (6 oz.) container plain yogurt
2 Tbsp of fresh mint, snipped
1 cup Herbed feta cheese, shredded
Warm a skillet over medium heat.
Brush steak on both sides with olive oil and season with salt and pepper.
Cook steak on one side for 8 minutes. Flip and cook for another 6 minutes.
Place steak on a cutting board and cover. Let stand for 5 minutes.
Toss salad greens and radish slices together.
In a small bowl stir yogurt and mint together.
Slice steak into 1-inch thick strips and add to the salad.
Pour dressing over the salad and toss to coat well.
Sprinkle with cheese before serving.
Tomatoes, onion and mushrooms can also be added for variety.
