Smoked Salmon Salad

This Smoked Salmon Salad is made with sweet oranges, fennel and onions, topped with fresh Parmesan cheese and a home-made olive oil dressing. Perfect for a light lunch, it also makes a great dish at parties. Make individual servings in containers to take along on a picnic for a special day.

Ingredients

1/3 cup olive oil
2 Tbsp orange juice
1/2 tsp sea salt
1/4 tsp black pepper
1 fennel bulb, cut in half and sliced super thin
4 oranges, sweet seedless, peeled, cut crosswise into thin circles
4 oz. smoked salmon, thinly sliced
4 green onions, cut lengthwise in thin strips, including tops
1/2 cup fresh Parmesan cheese, shaved into strips

Instructions

Whisk olive oil, orange juice, sea salt, and black pepper together in a small bowl.

Place fennel slices in a small bowl and pour half the olive oil dressing on top. Toss to coat.

Place 4 plates on a work surface and build the salads by first arranging the orange slices on each plate, then adding the fennel mixture.

Add 1/4 of the salmon, green onions, and shaved Parmesan to each salad.

Drizzle with the remaining olive oil dressing.

Salads can be prepared in sealable containers to take to a picnic.
