Scallops for Two in Creamy Bacon Sauce

Finding a great scallops recipe is always a special treat. This creamy bacon sauce is easy to make and dresses up the main dish. Add good, crusty bread, a light salad, and your favorite white wine. You won’t miss the “meat and potatoes”!

Ingredients

2 T unsalted butter
8 leeks, white part only, cut into thin slices
2 garlic cloves, minced
2 C heavy cream
1/2 lb. bacon, cut into 1 in. pieces
1/2 t salt
1/4 t pepper
1/2 lb. fresh scallops, rinsed and patted dry

Instructions

Using a skillet over low heat, melt butter; add garlic and leeks.

Stir often and cook for 10 minutes.

Raise temperature to medium and add cream.

Cook, stirring occasionally, until the mixture is reduced by 2/3 in volume.

In another skillet, cook bacon over medium heat until crisp, about 8 minutes.

Remove bacon using a slotted spoon and drain on paper towel.

Save 2 T of bacon grease.

Add cooked bacon, salt and pepper to the reduced sauce and stir.

Place the reserved bacon grease back into the empty skillet.

Heat over high heat until grease just begins to smoke.

Add scallops and cook 2 minutes, stirring often.

Divide the scallops onto 2 plates; top with bacon sauce before serving.
