This Sausage Breakfast Casserole blends turkey sausage with potatoes, peppers and corn for a hearty, healthy start to the day. This recipe also freezes well, so make a batch and keep on hand for quick meals when time is short.
Ingredients
7 potatoes, peeled and cut into cubes
1/2 Cup green pepper, chopped
1/2 Cup sweet red pepper, chopped
1/2 Cup frozen corn, thawed
1 onion, chopped
1 garlic clove, minced
1/2 lb. turkey sausage links, cut into small pieces
2 Tbsp olive oil
1/4 tsp pepper
Instructions
Bring potatoes to a brisk boil over high heat.
Reduce heat to medium and gently boil until potatoes begin to soften.
Drain potatoes and set aside.
Coat a skillet with non-stick cooking spray.
Sauté green and red peppers, corn, onions and garlic until tender.
Stir sausage into the vegetables and cook until heated through.
Add the potatoes.
Drizzle in oil and pepper. Stir well.
Spoon into an ungreased 13×9-inch baking dish.
Bake at 350F degrees for 35 minutes.
