1 (18 lb) whole turkey
5 cups of your favorite stuffing (optional)
1/2 cup unsalted butter, softened
Salt to taste
Pepper to taste
1 1/2 qt turkey stock

Instructions

Remove the neck and giblets from the turkey.

Rinse the turkey in cold water, then pat dry inside and out.

Place the oven rack to the lowest position.

Preheat the oven to 325F degrees.

Place a roasting rack into a large roasting pan.

Pour 2 cups of turkey stock into the roasting pan.

Fill the turkey cavity with stuffing. (optional)

Rub the turkey skin with butter, making sure to completely cover the whole bird.

Season with salt and pepper to taste.

Place the turkey breast side up on the roasting rack.

Tent aluminum foil over the turkey, but do not cover the roasting pan.

Roast for 2 1/2 hours, basting every 30 minutes with the stock in the pan.

Add additional stock as needed.

Remove foil and continue to roast for another 1 1/2 hours, basting every 30 minutes. Turkey is done when a meat thermometer reaches 180F degrees when inserted into the thigh.

Remove the turkey from the oven and let it rest for 30 minutes before carving.
