Roast Salmon makes an elegant holiday dinner. This recipe is simple, yet flavorful, and very easy to follow, using common items already in your pantry.
Ingredients
1 (2.5 lb.) pink salmon fillet
1/4 cup olive oil
1/2 tsp salt
1/4 tsp pepper
2 cloves of garlic, minced
3 Tbsp fresh parsley, chopped
Instructions
Preheat the oven to 425F degrees.
Line a baking sheet with foil.
Rinse the salmon and pat dry. Do not remove the skin.
In a small bowl, combine oil, salt, pepper, garlic and parsley.
Stir until well blended, and then rub the mixture over the salmon.
Bake for 15 minutes. The center of the filet should be slightly translucent.
Remove salmon from oven and allow it to rest for 5 minutes before serving. This step is critical: residual heat finishes cooking the filet without drying it out.
