3 cups rhubarb stalks, cut in 1-inch pieces
3/4 cup sugar
1 egg, well beaten
1/4 cup butter (1/2 stick)
1/3 cup brown sugar, firmly packed
2/3 cup flour
Instructions
Mix together the rhubarb, sugar, and egg. Place in 9 inch square casserole dish.
Combine the butter, brown sugar and flour to a bread crumb consistency. Sprinkle over the rhubarb mixture.
Bake in a 350F (175C) oven for 30 minutes.
Great served fresh from the oven or when it has cooled. Serve with cream, ice cream or custard.
