Red Cabbage Recipe for Two

Make this red cabbage recipe to share, or for yourself with a leftover portion for another day. The apple and onion blend in nicely and give the cabbage an extra oomph. I’m partial to red onion for everything, but, really, use whichever you like best.

1 1/2 Tbsp canola oil
1/2 red onion, chopped
1/2 head of red cabbage, shredded
1 large sweet apple, chopped
1 Tbsp water
1/2 tsp cinnamon
1/4 cup light brown sugar, packed
1 T flour
1/2 tsp salt
1/4 tsp pepper

Instructions

In a skillet over medium heat, cook the onion in oil, stirring occasionally, until just beginning to become tender, or about 4 minutes.

Add cabbage and continue cooking until the cabbage is wilted and tender, about 3 minutes.

Fold in apple and reduce heat to low.

Cook 5 minutes, stirring often.

In a bowl combine the brown sugar, cinnamon, and flour.

Stir sugar mixture into the skillet with the cabbage.

Sprinkle salt and pepper over the mixture and stir.

Continue cooking about 5 minutes or until the sauce has thickened to your liking.
