Healthy Quinoa Burgers are a tasty vegetarian alternative to beef burgers. Kidney beans and quinoa (pronounced keen-wa) are spiced with cumin, oregano, sage, garlic and cayenne for a burst of flavor that makes eating right easy and enjoyable. Serve with a side salad for a complete meal.
1/2 cup dried kidney beans
1/2 cup uncooked quinoa
2 cups fresh water
1 green onion, finely diced, including the tops
1 tsp salt, divided
1/2 tsp black pepper
2 tsp cumin
1 tsp oregano
1/4 tsp sage
dash garlic powder
1/4 cup corn starch
1 Tbsp olive oil
Soak kidney beans in cold water overnight.
Combine soaked kidney beans, quinoa and water in a large sauce pan. Bring to a boil over medium heat, then reduce to very low heat and simmer covered for 20 or 30 minutes. Beans should be tender and all water absorbed. Remove from heat and cool to room temperature.
Combine cooled kidney beans and quinoa with the remaining ingredients in a large mixing bowl.
Mash the mixture until it is well combined into the consistency of ground beef.
Form patties. Be sure to pack firmly.
Heat a small amount of oil in a skillet and fry patties until golden brown on each side.
Serve on buns with regular burger toppings.
