Pumpkin Truffles

These Pumpkin Truffles are surprisingly simple to prepare. Make a batch of these sweet treats featuring almonds and vanilla wafers for your next holiday party, or box them up as gifts. This versatile recipe offers several options for flavorings and finishing touches.

Ingredients

2 1/2 cups vanilla wafer cookies, crushed
1 cup toasted almonds, ground
1/2 cup powdered sugar, sifted
2 tsp cinnamon
1 (6 oz.) pkg. semi-sweet chocolate chips
1 cup pumpkin puree
1/3 cup coffee liqueur

Instructions

Combine cookies and almonds in a large bowl.

Sift powdered sugar into the bowl.

Sprinkle in cinnamon and toss to coat well.

Stir in the chocolate chips and mix well.

Fold in the pumpkin and pour the liqueur over the top.

Mix with your hands until fully incorporated.

Form 1-inch balls and place on a baking sheet lined with wax paper.

Chill in the refrigerator for at least 2 hours.

Finish the balls using any of these methods: roll in sifted powdered sugar, coconut or ground almonds. Try colored sprinkles to match the holiday.

Melt semi-sweet chips and dip the balls to coat. Make sure to return the candies to the refrigerator after dipping.
