Pumpkin Cake

Molasses and orange mix with nutmeg and cinnamon in this delicious Pumpkin Cake Recipe. This versatile cake works well as a snack or dessert. Great for buffet style parties as well as more formal holiday gatherings.

Ingredients

2 1/2 cups flour
2 tsp orange zest, grated
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/2 cup butter
1 1/2 cups brown sugar
2 eggs
3/4 cup buttermilk
1/2 cup pumpkin puree
1/4 cup molasses
Powdered sugar

Instructions

Preheat the oven to 350F degrees.

In a large mixing bowl, combine flour, orange zest, baking soda, salt, cinnamon and ginger. Mix well.

In a separate bowl, beat butter on low until creamy.

Add brown sugar to the butter and beat until fluffy.

Add eggs one at a time, mixing after each addition.

In another large bowl, mix together pumpkin, buttermilk and molasses.

Add 1/4 of the flour to the butter and mix well.

Add 1/4 of the pumpkin mix to the butter and blend well.

Continue alternating between dry and wet until all the ingredients are mixed.

Coat a baking pan with non-stick cooking spray.

Pour the batter into the pan and bake for 30 minutes.

Allow cake to cool slightly and top with powdered sugar.

Yield: 12 servings
