Peach and Blueberry Cobbler

Peach and Blueberry Cobbler is a diet dessert recipe with a whole lot of flavor. There is no reason why diet food can’t be tasty, too.Try this recipe and make your own decision.

Ingredients

1 cup low-fat biscuit and baking mix
1/2 cup regular oats
1/4 cup firmly packed brown sugar
1/2 tsp ground cinnamon
1/3 cup reduced-calorie stick margarine, chilled and cut into small pieces
4 cups frozen sliced peaches
2 cups frozen blueberries
1/4 cup granulated sugar

Instructions

Preheat oven to 350 F (170 C).

Combine first 4 ingredients in a bowl. Cut in margarine with a pastry blender or 2 knives until mixture resembles coarse meal (I did this part in my food processor). Set aside.

Combine peaches and blueberries in a 2-quart (3 litre) casserole; sprinkle with 1/4 cup sugar. Sprinkle oat mixture evenly over fruit.

Bake for 45 minutes or until bubbly.

Top this fruit-filled dessert with a dollop of vanilla low-fat frozen yogurt.
