Make a great chilled side dish for cookouts and 4th of July gatherings. This vegetarian Recipe for Pasta Salad mixes sweet red pepper, zucchini and olives in a rich creamy sauce.
Ingredients
2 cup spiral pasta
1 zucchini, cubed
1/2 cup ripe olives, sliced
1/2 cup sweet red pepper, chopped
1/4 cup onion, chopped
1/2 cup of mayonnaise
1/4 cup of sour cream
1 1/4 tsp dill
1/2 tsp salt
1/2 tsp ground mustard
1/4 tsp pepper
1/4 tsp garlic powder
Instructions
Cook and rinse pasta, then place in a large serving bowl.
Gently stir in the zucchini, olives, red pepper and onion.
In a small mixing bowl, whisk together mayonnaise, sour cream, dill, salt, mustard, pepper and garlic powder until blended together well.
Pour sauce over pasta and vegetables.
Gently stir to coat.
Cover and chill at least 2 hour but preferably overnight.
