When making Pasta Fruit Salad you will find this dish so versatile that you will be able to substitute in-season fruits for out-of-season fruits and generally mix and match to suit your taste or mood.
8oz (225 grams) shell macaroni, uncooked
8oz (225 grams) plain lowfat yogurt
1/4 cup frozen orange juice concentrate, thawed
15oz 420 grams)canned mandarin oranges, drained
1 cup red seedless grapes
1 cup white seedless grapes
1 cored, diced red apple (the goodness is in the skin, leave it on)
1/2 cup celery, sliced
1/2 cup walnut halves (You can use different nuts if preferred)
strawberries, for garnish
Cook pasta according to package directions.
Chill in cold water and drain well. Blend orange juice concentrate and yogurt well.
Toss mixture with remaining ingredients and pasta.
Cover and chill thoroughly.
Serve on a bed of lettuce.
Garnish with fresh strawberries.
A good tip with strawberries is to sprinkle lightly with Balsamic vinegar and this really brings the taste out.
