An easy to make parsnips recipe is just what you need to remind you of old Ireland. Or your childhood. Or that there is more than potatoes when making a meal.
Ingredients
2 1/2 lbs. parsnips, peeled
3 T chicken broth
1/2 t salt
1/4 t pepper
4 T butter
1 t parsley
Instructions
Remove woody cores from the parsnips then cut into quarters.
Cover with water in a saucepan over high heat and bring to a brisk boil.
Lower heat to medium and cook until tender, about 15 minutes.
Rinse under cool water and drain well.
Pre-heat oven to 350 F.
Pour broth over the parsnips in a baking dish.
Sprinkle on salt and pepper to cover well.
Dot the top of the parsnips with butter.
Bake 30 minutes or until fork tender.
Remove and sprinkle parsley over the top just before serving.
