For a flavorful twist on a classic, try this No Bake Pumpkin Pie recipe. The traditional spices of nutmeg and cinnamon are joined with coffee for an unexpected burst of flavor. This easy to prepare pie is great for office holiday parties and simple get-togethers with old friends.

Ingredients

1/2 cup brown sugar
4 tsp unflavored gelatin
1 Tbsp instant coffee
1/2 tsp ginger
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup boiling water
1 pt. vanilla ice cream
1 cup pumpkin puree
1 9-inch graham cracker crust

Instructions

In a large mixing bowl, toss together brown sugar, gelatin, instant coffee, the ginger, cinnamon and nutmeg. Combine well.

Carefully pour the boiling water over the top and stir well.

Be sure to stir from the bottom up to completely dissolve everything.

Add ice cream one spoonful at a time and stir after each addition.

Fold in the pumpkin puree. Blend well.

Chill the filling in the refrigerator until it firms enough to mound on a spoon.

Spoon filling into the graham crust, cover and refrigerate at least 2 hours.
