1 sweet red pepper, diced
1/2 cup olive oil
1/4 cup red wine vinegar
2-3 garlic cloves, crushed
1/2 tsp cayenne
1 Tbsp cumin
1/4 cup freshly chopped parsley

Instructions

Mix all ingredients and serve chilled.
