Minestrone Soup photoWithout doubt Minestrone Soup is the best vegetable soup made anywhere in the world.

You can always add other vegetables to taste because there are no real rules. For instance, add a chili and a can of Cannelini beans!

 

Ingredients

Onions, celery, carrots, tomatoes, mushrooms all chopped to about 1/4 inch (6mm)
1/2 cup ham and/or veal leftovers (optional)
4 ounces (110 grams) Rice
Butter
Stock (I prefer Chicken stock even though this is a vegetable dish.)
Salt, pepper and a bay leaf for seasoning

Instructions

Blanch chopped vegetables in salted boiling water; drain, then saute chopped vegetables in butter in a frying pan, adding salt and pepper to taste.

When vegetables are brown add a little stock to keep moist and cook slowly until they are soft. Adding a little stock as necessary to keep moist. Add the bay leaf when you add stock.

Add ham or veal pieces to the vegetables when you add stock.

Cook 4 ounces rice in chicken stock.

When rice is soft add the vegetables in stock and heat (do not boil) to serve.

Serve with warm, crusty bread and butter.
