Microwave Eggs

Microwave Eggs photoThis simple and quick Microwave Eggs recipe makes a better tasting dish and a better for you breakfast sandwich. Canadian bacon and low-fat cheddar cheese top off the eggs all on an English muffin for a delicious morning meal.

 

Ingredients

2 eggs
1 tsp skim milk
1/4 tsp salt
1/8 tsp pepper
2 slices of Canadian bacon
1 English muffin, split and toasted
2 Tbsp low-fat cheddar cheese, shredded

Instructions

Whisk together the eggs, milk, salt and pepper.

Spray 2 microwave safe custard cups with non-stick cooking spray.

Pour the egg mixture into the cups and microwave on high for 20 seconds.

Stir and microwave another 20 seconds until eggs are almost set.

Place a slice of Canadian bacon on 2 of the English muffin slices.

Top each with the eggs.

Place on a microwave-safe dish and cook for 10 seconds to melt the cheese.

Top each sandwich with the other half of the English muffins and serve.

Serves 2.
