Mexican Chicken Barbeque

Here’s an easy Mexican chicken barbecue recipe made in a skillet — no charcoal needed! &nbsp&nbsp Submitted by Steph, Manchester, Connecticut, USA

Ingredients

1 pouch of Lipton Mexican rice
chicken tenders
shredded blend cheese
barbecue sauce
green onion
sour cream

Instructions

Cook chicken in skillet. With about 5 minutes left for cooking, cover the chicken in barbecue sauce. Then sprinkle layer of cheese on chicken and cover until cheese is melted.

Cook the Mexican rice according to directions on the package.

Put a generous serving of rice down first in center of the plate. Add a few strips of chicken from the skillet on top of the rice.

Put a dollop of sour cream over the chicken and sprinkle a small amount green onion around the dish.
