This fresh Melon Salad gets an added touch of sweetness from homemade rum syrup. Watermelon, cantaloupe, honeydew and blueberries combine to make a colorful dish for your next party or picnic.
1/3 cup water
1/3 cup sugar
1/2 cup light rum
1/3 cup fresh lime juice
1 tsp zest from lime
1/4 of watermelon
1 honeydew melon
1 cup fresh blueberries
Bring the water to a boil over medium high heat.
Stir in the sugar, reduce to low and simmer for 3 minutes.
Add the rum and simmer an additional 2 minutes, stirring constantly.
Remove from heat and allow to cool slightly.
Stir in lime juice and lime zest. Set aside.
Dice the fruit into bite-sized pieces, or cut using a melon-baller.
Combine the cut fruit and blueberries in a large bowl.
Pour in the sugared rum blend and toss gently to coat.
Cover and chill until ready to serve.
