These Melon Fruit Salad Bowls are a refreshing treat on warm summer days. Melons, berries and kiwis get an added touch of sweetness from honey, and are served right in watermelon and cantaloupe bowls. Make these for picnics and cookouts.
1 cantaloupe, halved
1 small watermelon, halved
1 cup blueberries
1 cup strawberries, sliced
2 kiwis, peeled and sliced
1 cup honey
1/8 tsp salt
fresh mint leaves
Remove seeds from the cantaloupe and watermelon halves and scoop out the flesh with a melon baller.
Put melon balls into a bowl and set aside the hollowed-out rind bowls for later use.
Add remaining fruit to the melon balls./p>
Drizzle honey over the fruit. Add salt if desired. Mix well to coat.
Return honeyed fruit to the cantaloupe and watermelon bowls. Cover and chill.
Serve with a sprig of mint.
Suggestions: Shave a sliver off the bottom of the rind bowls to make them sit level. Add whipped cream or a spoon of vanilla yogurt to the fruit bowls when serving.
