Lemon Cupcakes

Who wouldn’t love these mini Lemon Cupcakes covered with orange glaze?  Five dozen little sweet things are perfect for parties or pot luck dessert.




For cupcakes

  • 1 package lemon cake mix (yellow if preferred)
  • 3.4 oz package instant lemon pudding
  • 4 eggs, extra-large
  • 3/4 cup cold water
  • 3/4 cup vegetable oil

For glaze

  • 3 cups Confectioners Sugar
  • 1/2 cup frozen orange juice concentrate (thawed)
  • 3 Tbsp melted butter
  • 3 Tbsp water




Preheat oven to 325 F.

Spray 5 mini cupcake pans with non-stick cooking spray.

Combine cake mix, pudding mix, eggs, water and oil. Mix thoroughly.

Using a 1 Tbsp measuring spoon, fill each mini cup about half way with batter.

Bake for 10-12 minutes. After 10 minutes, insert a toothpick in the center of a cupcake. It will come out clean when the cupcake is done.

Combine and thoroughly mix all the glaze ingredients.

Carefully remove cupcakes and place them close together on wax paper.

Dip each into the orange glaze.Allow any excess to drain before returning them to the wax paper.

Once all cupcakes have been dipped in glaze, cover them with wax paper and allow the glaze to dry.

When the glaze is dry, sample as many as you want.

Yields 5 dozen
