Lamb Shanks and Sausages and Beans is a real old-fashioned meal and with cannelloni beans added it is filling, nutritious and very, very tasty. This is low-cost recipe can be cooked all day in the crock pot.
2 onions, chopped
3 Tbsp butter
1 pound (450 grams) cannelloni beans, soaked overnight and drained. (You can use any white bean like butter beans or Haricot beans, but cannelloni beans are best.)
3 lamb shanks
4 carrots, sliced
Salt and pepper to taste
1 bay leaf
4 garlic sausages, sliced 1/2″ thick
Place beans in bottom of slow cooker and add remaining ingredients except sausages, with 1 1/2 quarts water.
Cover and cook on High 2 hours, then on Low 10 to 12 hours.
Add sausages, cover and cook on High 30 minutes.
