Lamb Kabobs

These simple to make Lamb Kabobs feature grilled zucchini and tomatoes for a colorful barbecued meal. Prepare ahead for quick tailgate party treats.

Ingredients

  • 1 3/4 lbs lamb, cut in 1 inch cubes
  • 3 zucchini, cut in 1/4 inch rounds
  • Olive oil
  • 4 small tomatoes, cut into quarters
  • 1 Tbsp parsley
  • Metal skewers

Lamb Kabobs

These simple to make Lamb Kabobs feature grilled zucchini and tomatoes for a colorful barbecued meal. Prepare ahead for quick tailgate party treats.

Ingredients

  • 1 3/4 lbs lamb cut in 1 inch cubes
  • 3 zucchini cut in 1/4 inch rounds
  • Olive oil
  • 4 small tomatoes cut into quarters
  • 1 Tbsp parsley
  • Metal skewers

Instructions

  • Brush the lamb and zucchini pieces with olive oil.
  • Slide a piece of tomato onto a skewer. Follow with a piece of lamb and then a piece of zucchini.
  • Continue this pattern ending with a piece of lamb.
  • Grill over medium-high heat turning often.
  • Sprinkle with parsley before serving.
  • Tip: Shoulder joint meat is best for this recipe. Trim excess fat to reduce fire flare ups on the grill.
