Lamb Kabobs
These simple to make Lamb Kabobs feature grilled zucchini and tomatoes for a colorful barbecued meal. Prepare ahead for quick tailgate party treats.
Ingredients
- 1 3/4 lbs lamb cut in 1 inch cubes
- 3 zucchini cut in 1/4 inch rounds
- Olive oil
- 4 small tomatoes cut into quarters
- 1 Tbsp parsley
- Metal skewers
Instructions
- Brush the lamb and zucchini pieces with olive oil.
- Slide a piece of tomato onto a skewer. Follow with a piece of lamb and then a piece of zucchini.
- Continue this pattern ending with a piece of lamb.
- Grill over medium-high heat turning often.
- Sprinkle with parsley before serving.
- Tip: Shoulder joint meat is best for this recipe. Trim excess fat to reduce fire flare ups on the grill.
