JELL-O® Fruit Salad

A classic holiday treat, this JELL-O Fruit Salad Recipe uses sour cream and fresh fruit to make a tasty and colorful side dish. Use a holiday-themed mold to make it the centerpiece of an Easter table.

Ingredients

  • 2 (3 oz.) boxes apricot gelatin
  • 2 cup boiling water
  • 2 cup sour cream, divided
  • 4 tsp lemon peel, grated and divided
  • 1 (16 oz.) can apricot halves, drained and chop coarsely
  • 2 Tbsp sugar
  • 1 tsp ginger
  • 1 Tbsp lemon juice

Instructions

Mix gelatin carefully with boiling water, whisking until completely dissolved.

Fold in 1 cup of sour cream and whisk until smooth.

Stir in 2 tsps of grated lemon peel and chopped apricots. Blend well.

Pour into a gelatin mold and chill until solid (about 4 hours).

In a small mixing bowl, combine the remaining sour cream, sugar, ginger, and lemon juice. Stir until blended.

Fold in the remaining lemon peel.

Unmold the gelatin and coat with topping before serving.

Any fruit can be used, but make sure to use the same flavor gelatin as fruit.

Serves 8.
