- 1/4 cup of ketchup
- 2 Tbsp of brown sugar
- 1 Tbsp soy sauce
- 4 garlic cloves
- 1 Tbsp onion, minced
- 2 tsp ground cumin
- 8 large Portobello mushrooms, sliced 1/2 inch thick
- 4 onion slices, 1/2 inch thick
- 8 slices of whole wheat bread
Whisk ketchup and brown sugar until sugar dissolves.
Stir in soy sauce, garlic and onion.
Blend in cumin.
Brush the sauce over the mushroom and onion slices.
Grill vegetables over medium heat for 10 minutes, turning often.
Grill the bread 2 minutes on each side.
Brush the toasted bread with the sauce.
Arrange a slice of mushroom and onion on the bread to make sandwiches.
