This Pineapple Salad Recipe uses grilled pineapple with fresh berries for a sweet twist on traditional fruit salad. Make it for backyard cookouts and summertime parties.
1 fresh pineapple
1 pint fresh blueberries
1 pint fresh strawberries cut in half
1/4 cup maple syrup
1/4 cup orange juice
1 Tbsp fresh mint, chopped
Pepper to taste
Peel the pineapple and cut off the bottom.
Cut the pineapple into 1/2 to 3/4 inch slices.
Spray each pineapple slice with non-stick cooking spray.
Grill slices over medium heat for 6 minutes each side or until lightly browned.
Cut each grilled slice into 8 wedges.
Place wedges into a large bowl and fold in the blueberries and strawberries.
Add maple syrup, orange juice and mint.
Mix well. Add pepper to taste if desired.
