Grilled Meatloaf

This Grilled Meatloaf recipe combines traditional spices of onion, garlic and parsley with the smoky flavor of the barbecue in a simple to make main dish.

 

Ingredients

  • 2 lbs lean ground beef
  • 2 onions, minced
  • 2 garlic cloves, minced
  • 2 Tbsp parsley, chopped
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 2 tsp salt
  • 1 tsp pepper
  • 2 flat metal skewers

 

Instructions

Heat the grill to medium-high.

Combine ground beef, onion, garlic and parsley in a food processor.

Blend until smooth.

Place beef mixture into a large mixing bowl.

Add coriander, cumin, salt and pepper.

Mix all ingredients together with your hands.

Form into two loaves.

Run the skewers through the center of the loaves.

Place the loaves on the grill and cover.

Cook for 20 minutes, turning half way through. For a rarer loaf, cook for 15 minutes. Add a few minutes for well-done.
