Greek Chicken and Vegetables

Greek Chicken and Vegetables is one of my favorites because it can be cooked on the barbecue as well as in the oven. I recently had a dozen guests around for a barbecue and prepared a dozen portions of this recipe in addition to the usual steaks and chicken pieces. Guess what? The talking point after the food was this traditional Greek dish.

Ingredients

  • 2 boneless chicken breasts, cut into strips
  • 1 can diced tomatoes
  • 1 red onion, finely diced
  • 12 stuffed olives (optional)
  • 1 clove garlic, crushed
  • 1 can green beans
  • 1 cup Feta cheese, crumbled
  • Salt and pepper to taste

Ingredients

  • 2 boneless chicken breasts cut into strips
  • 1 can diced tomatoes
  • 1 red onion finely diced
  • 12 stuffed olives optional
  • 1 clove garlic crushed
  • 1 can green beans
  • 1 cup Feta cheese crumbled
  • Salt and pepper to taste

Instructions

  • Make 4 aluminum foil pockets.
  • Mix all ingredients in a bowl.
  • Divide equally between the 4 foil pockets and seal.
  • Place on a hot barbecue, away from direct heat for 20 minutes
  • Check that the chicken is cooked and serve directly from foil pockets.
