Ginger Chicken with Cannelini Beans

Ginger chicken is another of our quick recipes and can be prepared and cooked in just 15 minutes making it ideal for people with no time and gourmet tastes. This recipe serves 4. You can adjust it for any number of people.

Ingredients

  • 4 boneless chicken breast halves
  • 2/3 cup (150 ml) of dry white wine
  • 1 Tbsp of butter
  • 1 Tbsp fresh ginger, grated
  • ½ tsp dried sage (Double quantity if using fresh.)
  • ½ cup fresh cream
  • Salt and pepper to taste
  • 2 large cans of cannelini beans (If unable to find cannelini beans, butter beans are fine.)

Instructions

Pre-warm serving plates.

Place chicken breasts between two sheets of wax paper and flatten with a wooden mallet.

Melt butter in a skillet. Place chicken into hot butter and sear on both sides.

Add wine, ginger and sage. Bring to boil then turn heat down to medium, or just below.

Season with salt and pepper.

Allow to simmer for 6 minutes and test chicken with a skewer – if fluids are clear chicken is cooked.

While chicken is cooking heat the cannelini beans in a saucepan or microwave, drain and mash to a pulp. Then form patties of mashed cannelini beans on each pre-warmed plate.

Remove chicken and place over the bed of cannelini beans.

Stir cream into the remaining chicken fluids to make a sauce and pour over the chicken.

Serve with a green side salad and a glass of the remaining chilled white wine that you used in cooking.

This entire gourmet meal takes around 15 minutes to prepare and cook and as a bonus it is very healthy, too.
