Make these easy German Potato Dumplings (Kartoffelkloesse) as an alternative to mashed potatoes.
2 lbs potatoes
1/2 cup flour
Salt, pepper and nutmeg to taste
Boil potatoes until tender. Peel and mash or coarsely grate.
Mix in flour, egg and seasonings.
Roll into 1″ balls. Optional: put one or more croutons into the center of each ball.
Drop into gently boiling salted water. Stir to keep dumplings from sticking to the bottom of the pan. Cook uncovered for 8 to 10 minutes.
Drain and coat lightly with melted butter. Serve immediately.
