Ingredients
- 4 green tomatoes, sliced 1/4 inch thick
- 2 tsp salt
- 1/2 cup cornmeal
- 1/2 cup Parmesan cheese, grated
- 1/2 tsp garlic salt
- 1/2 tsp dried oregano
- 1/2 tsp ground ginger
- 1/8 tsp red pepper flakes, crushed
- 2 eggs
- 1/2 cup of olive oil
Instructions
Season both sides of each tomato slice with salt and let sit for 10 minutes.
Toss cornmeal and parmesan cheese together in a shallow bowl.
Sprinkle in the garlic salt, oregano, ginger and red pepper. Blend well.
In a separate bowl, beat eggs lightly with a fork.
Heat oil in a skillet over medium heat.
Pat tomato slices dry, then dip in the egg.
Coat in the cheese and spice blend.
Fry the tomato slices a few at a time in the oil for about 3 minutes until the bottom is golden brown. Flip and fry until the other side is golden brown as well.
Remove and drain on paper towels.
If using a deep fat fryer, set the oil temperature to 375F degrees and cook for 5 minutes.
Serves 8.
