Fresh Fruit Salad Recipe

Layers of color and a refreshing dressing of sparkling lime make this Fresh Fruit Salad Recipe a 4th of July favorite. Simple to make, prepare ahead and take along to a cookout party as a healthy side or serve with whipped topping as dessert.

Ingredients

  • 1 cup of blueberries
  • 1 cup of plums, sliced
  • 1 cup pitted cherries, sliced
  • 1 cup cantaloupe, chopped
  • 1 cup strawberries, sliced
  • 1 cup peaches, sliced
  • 1 cup of small green grapes
  • 1 cup of raspberries
  • 1/4 cup of lime juice
  • 2 Tbsp of honey
  • 1 Tsp grated lime peel
  • 1 cup lemon-lime flavored sparkling water, chilled
  • Mint sprigs

Instructions

Layer the fruit in a 2-quart glass bowl in the order listed above.

Cover and chill for a minimum of 3 hours.

Just before serving, combine lime juice, honey and lime peel in a small bowl.

Whisk until well blended.

Stir in the sparkling water and mix well.

Pour the mixture over the layered fruit.

Garnish with mint sprigs.

Serves 8.
