A simple and quick Fresh Asparagus Recipe which has a zesty vinaigrette is sweetened with a bit of honey. Have a batch ready to take along on a picnic, or serve as an elegant side to a light lunch.
- 1 lb. fresh asparagus spears, washed and ends trimmed
- 1 Tbsp balsamic vinegar
- 2 lemons, juiced
- 2 tsp honey
- 1 shallot, grated
- 1/2 cup light olive oil
- 1/2 tsp salt
- 1/8 tsp black pepper
Blanch the asparagus spears in rapidly boiling water for 1 minute. Cool quickly in an ice bath. Drain well.
Wisk together balsamic vinegar, lemon juice, honey, and shallot.
While continuing to whisk, drizzle in olive oil until dressing thickens.
Season with salt and pepper and blend.
Place spears in a shallow dish and cover with dressing. Mix gently to coat well.
Serve immediately or can be chilled.
