Easy Cheesy Must Have Keto Tator Tots

Are you new to the Keto diet? I actually am! Although many of my friends and family have been doing Keto for a while now and they all seem to love it. I decided to try and put together a Keto Nacho recipe so I could enjoy one of my favorite foods while still doing Keto.

This recipe takes a little longer than usual because most of it is done completely from scratch. Keep this in mind when you are preparing to make it. I promise the wait is totally worth it because these are so, so good!

INGREDIENTS:

TOTS

  • 1 medium cauliflower
  • 4 strips of bacon-uncured
  • 1 c of shredded cheddar cheese
  • 1/2 c of shredded Parmesan cheese
  • ¾ c of shredded Monterrey jack cheese
  • 1 Tbsp of butter
  • 1 large egg
  • 1/4 tsp of onion powder
  • black pepper
  • Pink Himalayan salt

 

TOPPING

  • 1 Tbsp avocado oil
  • 1 lb of ground beef-preferably grass fed.
  • 1 Tbsp of chili powder
  • 1 /2 Tbsp of cumin
  • 1 tsp of paprika
  • 1 tsp of dried oregano
  • 1 tsp of onion powder
  • 1 tsp of  granulated garlic
  • 1/2 tsp cayenne pepper
  • 1/2 tsp of black pepper

 

NACHO CHEESE SAUCE

  • 1/2 Tbsp of avocado oil
  • 1 diced jalapeno
  • 1/2 cup of  heavy whipping cream
  • 1/4 cup of  rotel (Drained)
  • 8 oz cheddar cheese (Sliced)

INSTRUCTIONS:

TOTS:

  1. Preheat the Oven to 425*F.
  2. Cut cauliflower into quarters; grate it into fine pieces with a cheese grater.
  3. If you didn’t buy the already shredded cheeses, go ahead and shred them with a grater.
  4. Cook the bacon over medium-high heat. Once you get it to your likeness be sure to cut into small small pieces.  
  5. In a large mixing bowl combine cauliflower and cheeses.
  6. Add the butter, egg, bacon, and onion powder. Season with some pepper and pink Himalayan salt  to taste.
  7. Carefully stir all ingredients together until completely they are all completely blended. Then place the the mixing bowl in the refrigerator for approximately 10 minutes.
  8. Use parchment paper to cover a large baking sheet. Scoop the mixture out and form the tots by hand.  Equally space them out on the baking sheet. There should be enough for 15 tots/3 servings of 5. Feel free to make them smaller if you want, and adjust the cooking time accordingly if needed.
  9. Bake in the Oven at 425*F for about 22 Minutes, or until Golden Brown.

 

 

TOPPING:

  1. Heat a large pot  over Medium Heat and add the avocado oil and ground beef.
  2. Season the Beef with chili powder, cumin, paprika, dried oregano, onion powder, granulated garlic, cayenne pepper, and black pepper.
  3. Cook until brown. Drain as needed depending upon the beef used.
  4. Set the toppings aside until tots are finished cooking.

 

NACHO CHEESE SAUCE:

  1. In a medium pan warm up the avocado oil over medium-high heat.
  2. Add in the jalapeno and saute.
  3. Add in heavy whipping cream and rotel; stir together.
  4. Add in the cheese and stir until completely melted. Make sure it is mixed evenly with the other ingredients.
  5. Place the tots on a plate once they are through baking.

After your tots are done add the beef and cheese. Pour the nacho sauce on top and it is ready to go!
