Diet Banana Pancake

Ingredients

  • 2 cups flour
  • 1/2 cup water (You may need to add more water later.)
  • 1 egg
  • 1 or 2 bananas sliced
  • Fresh lemon juice
  • Sweetener of choice
  • Extra virgin olive oil for cooking

Instructions

Mix flour, egg and water into a pancake dough. Whisk well to allow air bubbles to form.

Heat oil in a skillet (heavy pan).

Spoon in sufficient pancake mix for a serving.

Just before fully cooked, add banana slices to taste.

Remove from pan, squeeze fresh lemon juice and sprinkle sweetener if required.

Serves 2.
