This classic Italian Minestrone Soup Recipe with pasta and vegetables makes a hearty lunch paired with a sandwich or serve as a first course for a formal dinner.
2 (19 oz) cans cannellini beans, drained
1 (1 lb) pkg. frozen mixed vegetables
1 (14.5 oz) can diced tomatoes
1/4 tsp basil
1/4 tsp garlic
1/4 tsp oregano
½ tsp salt
1 (12 oz) bottle vegetable juice cocktail
1 cup water
1/2 cup uncooked of your favorite macaroni
Combine beans, mixed vegetables and tomatoes into the crock pot.
Season with basil, garlic, oregano and salt.
Stir in the vegetable juice cocktail and water. Combine well.
Cover and cook on low for 7 and 1/2 hours.
Stir in uncooked macaroni.
Cover and increase heat to high.
Cook for 20 to 30 minutes until pasta is tender.
