Cilantro and Lime Salsa is a great addition to any barbecue because it is one of the few salsas that have an oriental flavor. I find it fantastic with barbecued chicken wings.
- 1 small onion, finely chopped
- 1 cup fresh cilantro (coriander), chopped
- 1/2 cup parsley, chopped
- 1/2 cup salad oil
- 6 Tbsp lime juice
- 3 Tbsp distilled white vinegar
- 2 cloves garlic, minced
- 1 jalapeno or other small hot chili pepper, stemmed, seeded and minced
Mix onion, cilantro, parsley, oil, lime juice, vinegar, garlic, and pepper in a non-metallic bowl.
Allow to stand in refrigerator for at least one hour, two is better.
Makes 2 1/2 cups.
