Cheese and Red Pepper Relish SandwichIngredients

2 red bell peppers
1 onion, quartered
4 cloves of garlic
1/3 cup of olive oil
1 Tbsp of balsamic vinegar
1/2 tsp salt
1/2 tsp pepper
1 large loaf of Italian bread, sliced
1 (8 oz.) pkg. soft goat cheese

Instructions

Grill peppers over medium heat for 8 minutes, turning often to lightly char on all sides.

Place grilled peppers in a sealed plastic bag and allow to steam.

Thread the onion and garlic onto a skewer.

Grill for 8 minutes, turning often to char on all sides.

Slit the peppers over a bowl to drain juice.

Peel and seed the peppers, then chop and place in the bowl with the juice.

Chop the onion and garlic and add to the peppers. Toss well.

Add the vinegar, salt and pepper. Stir to combine.

Grill the bread slices for 2 minutes on each side.

Spread the goat cheese on the bread and add the pepper relish.

Makes 6 sandwiches.
