Cajun Chicken Salad is a simple to prepare dish with a taste that is very, very special.Naturally the origin of this dish is Louisiana with that mixture of French cuisine and Caribbean spices that seem to blend together effortlessly. This salad is far too good to be served as a side salad and deserves to be the centerpiece of a great lunch.
Ingredients
- 6 Chicken breasts skinned and boned.
- Cajun spice mix
- Colored Fettucini
- Caesar Salad Dressing
- Italian Salad Dressing
- Assorted Vegetables
- Parmesan Cheese 1 cup
Instructions
Cook chicken with cajun spice mix. You could also use a mild chili if you cannot get Cajun spice mix. Chop into strips.
At the same time cook pasta until al dente. Al Dente is just cooked with a degree of firmness.
Rinse pasta and mix with dressings and vegetables so all are fairly coated.
Add Parmesan and chicken and toss.
This spicy chicken and pasta salad serves 6 to 8.
