Caesar Salad Dressing Recipe

Make a Traditional Caesar Salad Dressing Recipe or a Quick version for last-minute meals. Anchovies always optional.

Many people are discovering just how simple it is to make a dressing at home and in the process are developing the recipe to suit their unique taste. You will need a food blender and measure the ingredients into containers before you start. This allows you to make the dressing in next to no time.

Ingredients

  • 2 Eggs
  • 1 Clove of garlic
  • 1 Tbsp Worcestershire sauce
  • 2 tsps Dijon mustard
  • 3 Tbsp White Wine Vinegar
  • 3/4 Cup of Extra Virgin Olive Oil
  • 3/4 Cup of Vegetable Oil
  • 4 Anchovies (Optional)

Instructions

In a blender combine all the ingredients except oil and anchovies (optional). Blend until smooth.

Add the oil gradually with the blender running until fully incorporated in a mayonnaise consistency. It is best to pour the oil into the mixture in a steady stream.

Break the Anchovies into small pieces and fold into the dressing. Check for taste and add salt and pepper as needed. If you use anchovies you will need less salt or no salt.

Over time you will slightly alter the mix of ingredients until you find the taste that is right for you.

Variations

Quick Version uses ready-made ingredients for most of the recipe. Combine all the ingredients in a non-metallic bowl and mix well.This can be stored in the refrigerator for 3 or 4 days.
