Make a Traditional Caesar Salad Dressing Recipe or a Quick version for last-minute meals. Anchovies always optional.

  • 2 Eggs
  • 1 Clove of garlic
  • 1 Tbsp Worcestershire sauce
  • 2 tsps Dijon mustard
  • 3 Tbsp White Wine Vinegar
  • 3/4 Cup of Extra Virgin Olive Oil
  • 3/4 Cup of Vegetable Oil
  • 4 Anchovies (Optional)


In a blender combine all the ingredients except oil and anchovies (optional). Blend until smooth.

Add the oil gradually with the blender running until fully incorporated in a mayonnaise consistency. It is best to pour the oil into the mixture in a steady stream.

Break the Anchovies into small pieces and fold into the dressing. Check for taste and add salt and pepper as needed. If you use anchovies you will need less salt or no salt.

Over time you will slightly alter the mix of ingredients until you find the taste that is right for you.


Quick Version uses ready-made ingredients for most of the recipe. Combine all the ingredients in a non-metallic bowl and mix well.This can be stored in the refrigerator for 3 or 4 days.

  • 1 cup mayonnaise

  • 2 tablespoons lemon juice (freshly squeezed)

  • 2 cloves garlic (minced)

  • 2 teaspoons Dijon mustard

  • 1 teaspoon Worcestershire sauce

  • 2 teaspoons anchovy paste (or 2 anchovy fillets, minced)

  • 1/2 cup grated Parmesan cheese

  • Salt and black pepper to taste

  • 1/4 cup olive oil


  • Prepare Ingredients: Gather all the ingredients. Mince the garlic and anchovy fillets (if using whole anchovies).
  • Blend Base Ingredients: In a blender or food processor, combine mayonnaise, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, and anchovy paste. Blend until smooth.
  • Add Parmesan and Seasonings: Add the grated Parmesan cheese. Blend again briefly to incorporate.
  • Gradually Add Olive Oil: With the blender running on low speed, slowly drizzle in the olive oil until the dressing is well-emulsified and creamy.
  • Season to Taste: Taste the dressing and season with salt and black pepper as needed.
  • Store: Transfer the dressing to a jar or bottle and refrigerate until ready to use. Shake well before each use.
