Easy Cabbage Soup Recipe for a Healthy Meal


When in doubt, make cabbage soup that gets a hint of smoky flavor from crumbled bacon. An easy to prepare soup in the crockpot — start simmering in the morning for a hearty dinner. And it’s great with fresh bread any time of the year.

4 slices of cooked bacon, crumbled
1 lb cooked ground beef, crumbled
1 onion, chopped
3 white potatoes, cubed
4 cups cabbage shredded
3 cups vegetable broth
1 (28 oz) can diced tomatoes
1 tsp salt
1/2 tsp pepper


Stir the bacon and beef together in the crock pot.

Add the onion, potatoes and cabbage.

Mix in the broth.

Gently stir in the tomatoes.

Season with salt and pepper. Stir well.

Cover and cook on low for 8 hours.

Serves 8.

  • 1 medium head of cabbage, chopped

  • 2 large carrots, sliced

  • 1 large onion, diced

  • 3 cloves garlic, minced

  • 4 cups vegetable broth

  • 2 cups water

  • 1 can (14.5 oz) diced tomatoes

  • 2 celery stalks, sliced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • 1 tablespoon olive oil (optional, for sautéing)


  • Prepare Vegetables: Chop the cabbage, slice the carrots, celery, and bell peppers, dice the onion, and mince the garlic.
  • Sauté (Optional): In a large pot or Dutch oven, heat olive oil over medium heat. Add the onion and garlic, sautéing until softened, about 5 minutes.
  • Add Vegetables: Add the carrots, celery, bell peppers, and cabbage to the pot. Stir well to combine.
  • Add Liquids: Pour in the vegetable broth, water, and diced tomatoes. Stir to combine.
  • Season: Add thyme, oregano, paprika, salt, and pepper. Stir to mix the seasonings evenly.
  • Cook: Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for about 25-30 minutes, or until the vegetables are tender.
  • Serve: Ladle the soup into bowls and enjoy hot.
