A refreshing and crunchy cabbage slaw with a tangy dressing, perfect as a side dish for any meal or a topping for sandwiches and tacos.

Ingredients

  • 1/4 cup apple cider vinegar

  • 2 tbsp olive oil

  • 1 tbsp honey or agave nectar

  • 1 tbsp Dijon mustard

  • 1 tsp celery seeds (optional)

  • Salt and pepper to taste

Directions

  • Prepare the Vegetables:
  • In a large mixing bowl, combine shredded green cabbage, red cabbage, shredded carrots, and thinly sliced red onion.
  • If using, add chopped fresh cilantro.
  • Make the Dressing:
  • In a separate small bowl, whisk together apple cider vinegar, olive oil, honey (or agave nectar), Dijon mustard, and celery seeds (if using).
  • Season with salt and pepper to taste.
  • Combine and Toss:
  • Pour the dressing over the cabbage mixture.
  • Toss well to ensure all the vegetables are evenly coated with the dressing.
  • Chill and Serve:
  • Let the slaw sit for at least 10 minutes to allow the flavors to meld. For best results, refrigerate for 1 hour before serving.
  • Give it a final toss before serving.
