Everybody loves Butter Cookies. This is an easy-to-follow, easy-to-make recipe that produces truly great cookies, especially when they’re coated with chocolate.
Ingredients
1/2 lb (225 grams) butter
1/4 lb (115 grams) powder sugar (castor sugar)
2 Tbsp vanilla
1 lemon zest
2 eggs
1 egg yolk
3/4 lb (340 grams) flour
2 oz (55 grams) cornstarch
Instructions
Pre-heat oven to 350F (175C).
Mix all ingredients.
Using a pastry bag with a star tip pipe cookies in the shape of an “S” onto a sheet pan covered with pan liner (parchment paper).
Bake approximately 10 minutes.
Variations
Melt 1/2 pound (225 grams) of good quality chocolate and half coat the cookies by dipping when cool. If you do this to half of the cookies it appears that you made separate batches. I found the chocolate coated cookies no good for dunking!
